A simple, comforting slow cooker white chicken chili made with just five ingredients. This creamy, tangy, and slightly spicy dish is perfect for busy weeknights and requires minimal prep time.

  • 1.5 to 2 pounds boneless, skinless chicken breasts
  • 1 cup low-sodium chicken broth
  • 1 can (4-6 oz) diced green chiles, undrained
  • 8 ounces full-fat cream cheese, cubed
  • 2 cans (15 oz each) Great Northern beans or Cannellini beans, drained and rinsed

Instructions

  1. Place chicken breasts into the bottom of a 4- to 6-quart slow cooker.
  2. Pour chicken broth over the chicken, then add the can of diced green chiles including the liquid.
  3. Drain and rinse the white beans thoroughly, then add them to the slow cooker.
  4. Cover and cook on LOW for 6-7 hours or on HIGH for 3-4 hours until chicken is cooked through and easily shreddable.
  5. Remove chicken from the pot and shred into bite-sized pieces using two forks or tongs. Return shredded chicken to the slow cooker.
  6. Add the cubed cream cheese to the hot chili and stir gently but thoroughly until melted and smooth. If needed, cover and let sit on LOW for 10-15 minutes to help melt.
  7. Taste and adjust seasoning with salt, pepper, cayenne, or lime juice as desired.

Notes

Do not drain the green chiles; the liquid adds flavor. Use full-fat cream cheese for the best texture and melt. If the chili is too thick, add a splash of broth or water. Leftovers taste even better the next day. Can be frozen for up to 3 months, though texture may change slightly.
