  • 8 oz cream cheese, softened
  • 1 cup sharp cheddar cheese, shredded
  • 1216 slices thin-cut bacon
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ¼ teaspoon smoked paprika
  • Salt and black pepper to taste
  • 2 tablespoons chives or green onions, finely chopped (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Position the rack in the center of the oven. Line a baking sheet with aluminum foil for easy cleanup, then place a wire rack on top.
  2. Partially cook the bacon. Lay the bacon strips on a microwave-safe plate lined with paper towels. Microwave on high for 2-3 minutes, until the bacon is just starting to brown but is still flexible. Alternatively, cook the bacon in a skillet over medium heat for about 2 minutes per side. Pat the bacon dry with paper towels and cut each strip in half crosswise. Set aside.
  3. Prepare the jalapeños. Wearing gloves, cut the stems off each jalapeño. Slice the peppers into 1-inch thick rounds. You should get about 4-5 rounds per large jalapeño. Use a small spoon or melon baller to carefully scoop out the seeds and white membranes from each round.
  4. Make the filling. In a medium mixing bowl, combine the softened cream cheese, shredded cheddar, garlic powder, onion powder, smoked paprika, and a pinch of salt and pepper. Mix until smooth and well combined. Fold in the chopped chives or green onions if using.
  5. Fill the jalapeño rounds. Using a small spoon or your fingers (gloves still on), stuff each jalapeño round with the cream cheese mixture. Fill them generously but don’t overstuff — you want the filling level with the top of the pepper, not mounded over it. Smooth the tops with your finger.
  6. Wrap with bacon. Take a half-strip of partially cooked bacon and wrap it around each filled jalapeño round. The bacon should overlap slightly at the seam. Place each wrapped popper seam-side down on the wire rack.
  7. Bake for 18-22 minutes. The poppers are done when the bacon is deep golden brown and crispy, and the filling is bubbly and slightly browned on top. If you want extra-crispy bacon, switch the oven to broil for the last 1-2 minutes — but watch carefully so the bacon doesn’t burn.
  8. Cool slightly before serving. Let the poppers rest on the rack for 5 minutes. Transfer to a serving platter, garnish with extra chives if desired, and serve.

Notes

Wear gloves when handling jalapeños to avoid burning your skin or eyes. Partially cook the bacon until pliable but not crispy. Pat the peppers dry after washing to ensure crispy bacon. Don’t overcrowd the rack; leave at least ½ inch between poppers. Let them rest for 5 minutes before serving to allow the filling to set. Double the batch for a crowd.
