Ingredients

Scale
  • 1 lb lean ground turkey (93/7 works best)
  • 1 tbsp olive oil
  • 1 small yellow onion, finely diced (about ½ cup)
  • 3 cloves garlic, minced
  • 1 tbsp chili powder (ancho chili powder preferred)
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • ½ tsp dried oregano
  • ½ tsp salt
  • ¼ tsp black pepper
  • ¼ tsp cayenne pepper (optional, for heat)
  • ½ cup chicken broth
  • 1 tbsp tomato paste
  • 2 cups plain full-fat Greek yogurt (Fage or Chobani recommended)
  • 4 oz cream cheese, softened
  • 1 cup shredded Mexican blend cheese, divided (¾ cup in mix, ¼ cup for top)
  • 1 tbsp lime juice (fresh preferred)
  • ½ tsp garlic powder
  • ¼ tsp salt
  • Fresh cilantro, chopped (for topping)
  • Pickled jalapeños (optional, for topping)
  • Cherry tomatoes, diced (for topping)
  • Green onions, sliced (for topping)
  • Tortilla chips, for serving

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Heat the olive oil in a large skillet over medium-high heat. Add the ground turkey and cook, breaking it up, until no longer pink (about 5-6 minutes).
  3. Push the turkey to one side of the pan. Add the diced onion and cook for 2-3 minutes until softened. Stir in the minced garlic and cook for 30 seconds until fragrant. Mix everything together.
  4. Sprinkle the chili powder, cumin, smoked paprika, oregano, salt, black pepper, and cayenne (if using) over the turkey. Stir constantly for about 1 minute to bloom the spices.
  5. Stir in the chicken broth and tomato paste. Scrape up any browned bits from the bottom of the pan. Let it simmer for 2-3 minutes until the liquid has mostly evaporated. Remove from heat and let cool slightly.
  6. In a mixing bowl, combine the Greek yogurt, softened cream cheese, ¾ cup of shredded Mexican blend cheese, lime juice, garlic powder, and salt. Stir until smooth and well combined.
  7. Spread the Greek yogurt mixture evenly into an 8×8 or 9×9 baking dish. Top with the seasoned turkey, spreading it in an even layer. Sprinkle the remaining ¼ cup of shredded cheese over the top.
  8. Bake for 15-18 minutes, until bubbly around the edges and the cheese is melted and lightly golden.
  9. Let the dip rest for 5 minutes before serving. Garnish with fresh cilantro, diced tomatoes, sliced green onions, and pickled jalapeños if desired. Serve with tortilla chips.

Notes

Don’t use non-fat Greek yogurt as it can curdle. Let the cooked turkey cool slightly before assembling to prevent the yogurt base from thinning. Don’t overbake; the dip is done when bubbly and cheese is melted. Can be assembled up to 24 hours in advance and refrigerated unbaked; add 5-10 minutes to bake time if cold. Leftovers can be stored in an airtight container in the refrigerator for up to 4 days.
