  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350ยฐF (175ยฐC). Line a 12-cup muffin tin with paper liners.
  2. Make the cream cheese filling: In a small bowl, beat softened cream cheese with 1/4 cup granulated sugar, egg yolk, and 1/2 teaspoon vanilla extract until smooth. Set aside at room temperature.
  3. Make the streusel topping: In another small bowl, combine 1/2 cup flour, 1/3 cup packed brown sugar, and 1/2 teaspoon cinnamon. Cut in cold butter cubes using a pastry cutter or fingertips until mixture resembles coarse crumbs. Refrigerate.
  4. Whisk dry ingredients: In a medium bowl, whisk together 1 3/4 cups flour, baking soda, baking powder, salt, and pumpkin pie spice.
