Ingredients

Scale
  • 6 medium apples, peeled, cored, and sliced (about 6 cups)
  • 1/4 cup granulated sugar
  • 2 tablespoons all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 1 cup old-fashioned rolled oats
  • 3/4 cup all-purpose flour
  • 1/2 cup packed light brown sugar
  • 1/4 cup granulated sugar
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, cold and cut into small cubes
  • 1/2 cup store-bought salted caramel sauce
  • Flaky sea salt, for finishing

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish lightly with butter or non-stick spray.
  2. Prepare the apples: Peel, core, and slice apples into 1/4-inch thick pieces. Toss in a large bowl with granulated sugar, flour, cinnamon, nutmeg, lemon juice, and vanilla. Let sit for 5 minutes.
  3. Make the oat crumble: In a separate bowl, whisk together oats, flour, brown sugar, granulated sugar, and salt. Add cold butter cubes and cut in with a pastry cutter or fingers until mixture resembles coarse sand with some pea-sized butter chunks.
  4. Assemble the crisp: Spread apple mixture evenly in prepared dish. Sprinkle oat crumble over the top in an even layer. Do not press down.
  5. Bake: Place dish on a baking sheet. Bake for 40-45 minutes, until filling is bubbly and topping is deep golden brown. If browning too quickly, tent with foil after 30 minutes.
  6. Add the caramel: Remove from oven and let cool 5 minutes. Warm salted caramel sauce and drizzle over top. Sprinkle with flaky sea salt.
  7. Rest before serving: Let crisp sit for at least 10-15 minutes before serving to allow filling to set.

Notes

Use cold butter for a crumbly topping. Don’t skip the lemon juice—it brightens the flavor. Let the crisp rest after baking to allow the filling to set. For a gluten-free version, use a 1:1 gluten-free flour blend and certified gluten-free oats. For dairy-free, use cold coconut oil or plant-based butter.
