Classic Peach Cobbler: Easy Buttermilk Biscuit Recipe

This classic peach cobbler features fluffy buttermilk biscuits atop a pool of jammy, sweet peaches. It’s a simple, crowd-pleasing dessert that captures the essence of summer and is perfect for any occasion.

  • 3/4 cup granulated sugar
  • 2 tablespoons cornstarch
  • 1 tablespoon fresh lemon juice

  • 1/4 teaspoon salt
  • 2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup cold unsalted butter, cubed
  • 3/4 cup cold buttermilk
  • 1 teaspoon vanilla extract
  • 1 tablespoon turbinado sugar (for sprinkling)

Instructions

  1. Preheat your oven to 375ยฐF (190ยฐC). Place a 9×13-inch baking dish or cast iron skillet in the oven while it preheats.
  2. In a large bowl, combine sliced peaches, 3/4 cup granulated sugar, cornstarch, lemon juice, cinnamon (if using), and 1/4 teaspoon salt. Stir gently until peaches are evenly coated. Let sit while preparing biscuits.
  3. In a separate large bowl, whisk together flour, 1/4 cup sugar, baking powder, baking soda, and 1/2 teaspoon salt. Add cold, cubed butter. Using a pastry cutter or fingertips, work butter into flour mixture until it resembles coarse meal with some pea-sized butter pieces remaining.
  4. Make a well in the center and pour in cold buttermilk and vanilla extract. Stir just until dough comes together; it will be sticky and shaggy.
  5. Carefully remove hot baking dish from oven. Pour peach mixture into dish and spread evenly. Drop spoonfuls of biscuit dough over the top; do not spread them out.
  6. Brush tops of biscuits with a little buttermilk and sprinkle generously with turbinado sugar.
  7. Place dish on a baking sheet. Bake for 40-45 minutes, or until biscuits are golden brown and peach filling is bubbling around the edges. If biscuits brown too quickly, tent loosely with foil for the last 10 minutes.
  8. Let cobbler cool on a wire rack for at least 15-20 minutes before serving. Serve warm, preferably with vanilla ice cream or whipped cream.

Notes

Keep all ingredients cold for fluffy biscuits. Do not overmix the biscuit dough. Let peaches macerate to create syrup. Use a baking sheet under the dish to catch drips. For best results, use real buttermilk.
