Moist, tender pumpkin donut holes made with yogurt for a soft texture, coated in cinnamon sugar. These easy baked treats are perfect for fall hosting or a quick autumn craving.

  • ยผ cup plain Greek yogurt
  • ยฝ cup granulated sugar
  • ยผ cup brown sugar

  • 1 teaspoon vanilla extract
  • 1 ยฝ teaspoons pumpkin pie spice
  • 1 teaspoon baking powder
  • ยฝ teaspoon baking soda
  • ยฝ teaspoon salt
  • ยฝ cup granulated sugar (for coating)
  • 1 tablespoon ground cinnamon (for coating)
  • 2 tablespoons unsalted butter, melted (for coating)

Instructions

  1. Preheat oven to 350ยฐF (175ยฐC). Spray a mini muffin pan with non-stick cooking spray or line with mini paper liners.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and pumpkin pie spice until combined and lump-free.
  3. In a separate large bowl, whisk the granulated sugar, brown sugar, melted butter, egg, vanilla extract, pumpkin puree, and Greek yogurt until smooth and glossy.
  4. Pour the dry ingredients into the wet ingredients. Gently fold together with a spatula until just combined. Do not overmix.
  5. Fill mini muffin cups about ยพ full with batter using a scoop or spoon. You should get 24-30 donut holes.
  6. Bake in the center of the oven for 10-12 minutes, or until they spring back to the touch and a toothpick comes out clean.
  7. Let donuts cool in the pan for 5 minutes, then transfer to a wire rack to cool slightly.
  8. Mix the coating sugar and cinnamon in a small bowl. Brush warm donuts lightly with melted butter, then roll in the sugar mixture to coat.
  9. Serve immediately while warm.

Ensure ingredients like egg and yogurt are at room temperature for best texture. Do not pack the flour when measuring to avoid dry donuts. Coat donuts while they are still slightly warm so the butter adheres to the sugar. For gluten-free, use a 1:1 gluten-free flour blend. For dairy-free, use coconut yogurt and coconut oil/vegan butter.
