A rich, comforting slow cooker soup that captures the flavors of traditional lasagna without the hassle. Featuring browned Italian sausage, ground beef, and a tangy tomato broth, finished with creamy herbed ricotta dollops.

  • 1 lb ground beef (80/20 lean-to-fat ratio)
  • 1 lb Italian sausage (mild or hot, casings removed)
  • 1 large yellow onion, diced finely
  • 45 cloves garlic, minced fresh
  • 28 oz can crushed tomatoes (San Marzano preferred)
  • 2 tbsp tomato paste
  • 4 cups low-sodium beef broth
  • 810 lasagna noodles (broken into pieces or no-boil)
  • 15 oz container whole milk ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • Salt and black pepper to taste

Instructions

  1. Heat a large skillet over medium-high heat. Add ground beef and Italian sausage, breaking it up with a wooden spoon. Cook until no longer pink (5-7 minutes). Drain excess grease if necessary, but leave some for flavor.
  2. In the same skillet, add diced onion and cook until softened (about 2 minutes). Add minced garlic and cook for 30 seconds to 1 minute until fragrant, being careful not to burn.
  3. Stir in tomato paste, dried basil, and oregano. Cook for 1 minute to toast the spices and paste.
  4. Transfer the meat and onion mixture to a 6-quart slow cooker. Add crushed tomatoes and beef broth. Stir well to combine.
  5. Add lasagna noodles to the slow cooker. If using regular noodles, break them into thirds or quarters. Stir gently to submerge noodles in the liquid.
  6. Cover and cook on Low for 6-8 hours or on High for 3-4 hours until noodles are tender.
  7. While soup cooks, mix ricotta cheese with a pinch of salt, pepper, and optional fresh herbs.
  8. About 15 minutes before serving, sprinkle shredded mozzarella over the soup and replace the lid to melt the cheese.
  9. Ladle soup into bowls and top each serving with a generous dollop of herbed ricotta. Serve immediately.

Notes

Do not skip browning the meat; it adds essential depth of flavor. Watch garlic closely to prevent burning. For meal prep, store pasta separately to prevent mushiness. The soup thickens in the fridge; add broth when reheating.
