Cozy Friendsgiving Mini Turkey Pot Pies

Individual-sized turkey pot pies with a creamy, veggie-packed filling and a flaky, buttery crust. Perfect for Friendsgiving, leftovers, or cozy weeknight dinners.

  • 2 cups leftover turkey, diced or shredded
  • 4 tablespoons unsalted butter
  • 4 tablespoons all-purpose flour
  • 1 cup chicken broth (low-sodium)
  • 1/2 cup heavy cream
  • 1 cup frozen peas and carrots (total)
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • Salt and black pepper to taste
  • 1 package pie crusts (two crusts)
  • 1 egg beaten with 1 tablespoon water (for egg wash)

Instructions

  1. Preheat oven to 400ยฐF (200ยฐC). Line a baking sheet with parchment paper.
  2. In a medium saucepan, melt 2 tablespoons of butter over medium heat. Add diced onion and cook for 3-4 minutes until softened.
  3. Add minced garlic and cook for another 30 seconds until fragrant.
  4. Sprinkle flour over the onions and garlic. Whisk constantly for 1-2 minutes to create a roux.
  5. Slowly pour in chicken broth while whisking continuously. Stir in heavy cream and cook until the sauce thickens, about 3-5 minutes.
  6. Stir in frozen peas, carrots, thyme, salt, and pepper. Heat through for 2 minutes.
  7. Remove from heat and fold in the diced turkey.
  8. Roll out pie crusts and cut into circles slightly larger than the top of your ramekins.
  9. Spoon the turkey mixture into 6-8 small ramekins, filling them about 3/4 full.
  10. Place a circle of crust over each ramekin. Trim excess crust, press edges to seal, and cut a small slit in the center for steam.
  11. Brush the tops of the crusts with the egg wash.
  12. Bake on the prepared baking sheet for 20-25 minutes, or until crusts are golden brown and filling is bubbly.
  13. Let cool for 5 minutes before serving.

Notes

If the crust starts browning too quickly, cover loosely with aluminum foil. If the filling is too thick, add a splash more broth. If itโ€™s too thin, cook it longer on the stove. Letting the pot pies cool for 5 minutes is crucial to allow the filling to set.
