Cozy Homemade Chicken and Dumplings: Easy Comfort Food

  • 2 cups cooked chicken, shredded or diced
  • 3 tablespoons unsalted butter
  • 1 medium yellow onion, finely diced
  • 2 large carrots, peeled and diced into small rounds
  • 2 stalks celery, sliced thinly
  • 3 cloves garlic, minced
  • 4 cups low-sodium chicken broth
  • ยฝ cup heavy cream
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • 1 ยฝ cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 3 tablespoons butter, melted
  • ยฝ cup whole milk
  • 1 large egg

Instructions

  1. In a large Dutch oven or heavy pot, melt 3 tablespoons of butter over medium heat. Add diced onion and celery, sautรฉing for 3-4 minutes until soft and translucent.
  2. Add minced garlic and cook for 30 seconds until fragrant.
  3. Sprinkle flour over the vegetables to make a roux. Stir constantly for 1-2 minutes until it looks like a wet paste.
  4. Slowly pour in chicken broth while stirring to prevent lumps. Add bay leaf and dried thyme.
  5. Bring to a gentle boil, then reduce heat to low and simmer uncovered for 10 minutes until carrots are tender.
  6. In a medium bowl, whisk together flour, baking powder, and salt. In a separate bowl, whisk egg, melted butter, and milk.
  7. Pour wet ingredients into dry ingredients and stir gently until just combined. Do not overmix.
  8. Drop spoonfuls of dough directly into the simmering broth, spacing them out slightly.
  9. Cover with a tight-fitting lid and reduce heat to low-medium. Steam for 15 minutes without lifting the lid.
  10. Remove lid, stir in shredded chicken and heavy cream. Heat through for 2-3 minutes.
  11. Remove bay leaf, taste and adjust seasoning with salt and pepper. Serve hot.

Notes

Do not overmix the dough to avoid tough dumplings. Keep the lid on during steaming to ensure proper cooking. Use fresh baking powder for best results. Leftovers keep in the refrigerator for up to 3 days. Do not freeze as dumplings may become mushy.
