Instructions

  1. Brew the chai tea: Bring 1 cup of water to a boil. Pour over 2 chai tea bags in a heatproof mug or small teapot. Let steep for 5 minutes. Remove tea bags and set aside to cool slightly.
  2. Make the pumpkin base: In a small bowl, combine pumpkin puree, maple syrup, pumpkin pie spice, vanilla extract, and a pinch of salt. Whisk vigorously until completely smooth (about 30 seconds). If too thick, add 1 tablespoon warm water to thin.
  3. Chill the chai: If in a hurry, place brewed chai in the freezer for 5 minutes to cool. Otherwise, let sit at room temperature.
  4. Fill a tall glass almost to the top with ice cubes.
  5. Assemble the latte: Pour cooled chai over ice. Then pour pumpkin base over chai. Do not stir yet.
  6. Add the milk: Slowly pour milk over the back of a spoon into the glass to create layers.
  7. Stir and garnish: Stir until color is uniform and creamy. Taste and adjust sweetness if needed. Top with whipped cream, a drizzle of maple syrup, and a sprinkle of pumpkin pie spice or cinnamon if desired.
