Instructions

  1. Preheat oven to 375°F (190°C).
  2. Peel, core, and slice apples into 1/4 inch thick uniform slices. Place in a large bowl and drizzle with lemon juice, tossing to coat.
  3. Add maple syrup, cornstarch, cinnamon, and vanilla extract to the apples. Toss until apples are evenly coated and glossy.
  4. Pour the apple mixture into a 9×13 inch baking dish and spread evenly.
  5. In a separate bowl, combine rolled oats, flour, chopped pecans, granulated sugar, and sea salt.
  6. Add the cold, cubed butter to the dry ingredients. Use fingers or a pastry cutter to work the butter in until the mixture resembles coarse crumbs with pea-sized clumps.
  7. Sprinkle the streusel topping evenly over the apples without pressing down.
  8. Bake for 45-50 minutes, or until the topping is golden brown and the filling is bubbling. Cover loosely with foil if the topping browns too quickly.
  9. Remove from oven and let cool for at least 15 minutes before serving to allow the filling to thicken.
