Instructions

  1. Preheat oven to 350ยฐF (175ยฐC). Grease a 9×5-inch loaf pan and line with parchment paper.
  2. Melt the unsalted butter and let it cool slightly.
  3. In a large mixing bowl, mash the ripe bananas until smooth. Add the pumpkin puree and mix until combined.
  4. Add the melted butter, eggs, granulated sugar, and brown sugar to the banana-pumpkin mixture. Whisk vigorously until smooth.
  5. In a separate small bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, nutmeg, and ginger.
  6. Pour the dry ingredients into the wet mixture. Fold gently with a rubber spatula until just combined; do not overmix.
  7. In a small bowl, mix the swirl ingredients (2 tbsp sugar, 1 tbsp cinnamon, and optional softened butter) to form a paste.
  8. Pour half of the batter into the prepared loaf pan. Spoon dollops of the cinnamon sugar mixture over the batter. Pour remaining batter on top and smooth the surface.
  9. Use a knife to swirl the cinnamon sugar into the batter in a zig-zag pattern.
  10. Bake for 55-65 minutes, or until a toothpick inserted into the center comes out clean. Tent with foil if the top browns too quickly.
  11. Let the bread cool in the pan for 15 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

Ensure bananas are very ripe for maximum sweetness and moisture. Do not overmix the batter to avoid a dense texture. The bread keeps well at room temperature for 3 days or can be frozen for up to 3 months. For a gluten-free version, substitute all-purpose flour with a 1:1 gluten-free baking blend.
