  • 1 ½ cups whole milk
  • 1 cup pure pumpkin puree
  • ½ cup packed brown sugar

  • 2 teaspoons pumpkin pie spice
  • 1 teaspoon pure vanilla extract
  • 1 pinch sea salt

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13 inch baking dish.
  2. Arrange bread cubes in a single layer in the prepared dish. Optionally, toast cubes for 5 minutes first to ensure crispiness.
  3. In a large bowl, whisk together eggs, milk, pumpkin puree, brown sugar, melted butter, pumpkin pie spice, vanilla extract, and salt until smooth.
  4. Pour the custard mixture evenly over the bread. Press down gently with a spatula to ensure bread is submerged. Let sit for 5 minutes, then press down again.
  5. Cover tightly with plastic wrap or foil and refrigerate for at least 4 hours, preferably overnight.
  6. Remove from refrigerator and let sit at room temperature for 15-20 minutes while oven preheats.
  7. Bake for 45-55 minutes until the top is golden brown and the center is set but slightly jiggly.
  8. Let rest for 10 minutes before slicing and serving warm.

Notes

Use day-old or toasted bread to prevent sogginess. The overnight rest is crucial for texture. If the top browns too quickly, cover loosely with foil. Can be frozen unbaked for up to 3 months.
