A nostalgic, comfort-food soup that captures the flavors of lasagna in a slow-cooked broth, featuring savory sausage, rich tomatoes, and creamy ricotta pockets.

  • 1 pound Italian sausage (mild or hot)
  • 1 medium yellow onion, finely diced
  • 4 cloves garlic, minced
  • 2 cans (28 oz each) crushed tomatoes
  • 2 tablespoons tomato paste
  • 4 cups chicken or vegetable broth (low-sodium)
  • 2 teaspoons Italian seasoning
  • 1/2 teaspoon red pepper flakes (optional)
  • Salt and black pepper to taste
  • 15 ounces whole milk ricotta cheese
  • 1 cup small shell pasta or ditalini
  • Fresh basil, chopped
  • Grated Parmesan cheese for serving

Instructions

  1. Heat a large skillet over medium-high heat and brown the Italian sausage, breaking it up with a wooden spoon. Drain excess fat if necessary, leaving some for flavor.
  2. In the same skillet, sautรฉ the diced onion until soft and translucent. Add the minced garlic and cook for 30 seconds until fragrant.
  3. Transfer the sausage and onion mixture to a 6-quart slow cooker insert.
  4. Add the crushed tomatoes, tomato paste, broth, Italian seasoning, and red pepper flakes to the slow cooker. Stir well to dissolve the tomato paste.
  5. Cover and cook on LOW for 4-6 hours or HIGH for 2-3 hours.
  6. Cook the pasta separately on the stovetop according to package directions to prevent mushiness.
  7. While the soup finishes, temper the ricotta by stirring in a ladleful of hot soup broth to prevent clumping.
  8. Stir the tempered ricotta into the slow cooker. Add the cooked pasta and fresh basil.
  9. Taste and adjust seasoning with salt and pepper. Serve immediately with grated Parmesan on top.

Notes

For best texture, cook pasta separately. If the soup is too thick, add extra broth. Ricotta should be tempered with hot broth before adding to prevent clumping. Leftovers keep for 4 days in the fridge; freeze soup base without pasta for up to 3 months.
