Instructions

  1. Combine the ingredients. In your slow cooker, add the pumpkin puree, brown sugar, maple syrup, cinnamon, ginger, nutmeg, cloves, and salt. Stir everything together with a wooden spoon until the mixture is smooth and the sugar has mostly dissolved. It will look a bit runny at this stage โ€” that’s normal.
  2. Cook on low for 6 to 8 hours. Place the lid on the slow cooker and set it to low. Do not open the lid for the first 4 hours.
  3. Stir halfway through. After about 4 hours, give the pumpkin butter a good stir. Scrape down the sides of the slow cooker with a spatula. You’ll notice it has already thickened slightly and the color has deepened to a warm amber.
  4. Check for doneness at 6 hours. The pumpkin butter is ready when it has reduced by about a third and coats the back of a spoon. Drag your finger through the coating on the spoon โ€” if the line holds its shape, it’s done. If it runs back together, cook for another hour and check again.
  5. Add the vanilla and vinegar. Once the pumpkin butter has reached the right consistency, stir in the vanilla extract and apple cider vinegar. This brightens the flavor and rounds out the sweetness.
  6. Blend (optional). If you want a silky-smooth texture, use an immersion blender directly in the slow cooker. Pulse a few times until it reaches your desired consistency. I personally leave it a little textured because I like the rustic feel, but both versions are delicious.
  7. Cool completely. Let the pumpkin butter cool in the slow cooker for about 30 minutes, then transfer it to your jars or containers. Leave the lids slightly loose until it reaches room temperature to prevent condensation from forming inside the jars.
  8. Refrigerate. Once fully cooled, seal the jars tightly and refrigerate. The pumpkin butter will continue to thicken as it chills.

Notes

Don’t rush the cooking time. Low and slow is non-negotiable. If your pumpkin butter isn’t thickening after 8 hours, prop the lid open with a wooden spoon for the last hour to let steam escape. The flavors improve after a day or two in the fridge. For a less sweet version, reduce brown sugar to ยฝ cup and maple syrup to 2 tablespoons. For a sugar-free version, use a granulated monk fruit sweetener and skip the maple syrup (add an extra ยผ cup water to compensate).
