  • 1 tablespoon fresh ginger, finely grated
  • 1 tablespoon lemon juice

  • 1 tablespoon cornstarch
  • 1 cup old-fashioned rolled oats
  • 1 cup all-purpose flour
  • ยฝ cup unsalted butter, cold and cubed
  • ยผ cup granulated sugar
  • ยฝ teaspoon salt

Instructions

  1. Preheat oven to 375ยฐF (190ยฐC).
  2. Peel, core, and slice pears into ยผ-inch thick half-moons. Place in a large bowl.
  3. Add lemon juice, brown sugar, cinnamon, cardamom, and cornstarch to the pears. Toss to coat.
  4. Add grated fresh ginger and mix well. Let sit for 5 minutes.
  5. In a separate large bowl, whisk together rolled oats, flour, granulated sugar, and salt.
  6. Add cold cubed butter to the dry ingredients. Use a pastry cutter or fingers to work butter in until mixture resembles coarse crumbs with pea-sized clumps.
  7. Pour pear mixture into a 9×9 inch baking dish.
  8. Spread topping evenly over the fruit.
  9. Bake for 45-50 minutes until topping is golden brown and filling is bubbling vigorously.
  10. If topping browns too quickly, cover loosely with foil after 30 minutes.
  11. Cool for at least 15 minutes before serving to allow filling to thicken.

Notes

Use cold butter for a crunchy topping. Ensure pears are uniform in size for even cooking. Let the crumble cool for 15 minutes to set the filling. Can be made dairy-free by using vegan butter and gluten-free by using a 1:1 gluten-free flour blend.
