A quick, comforting turkey chili with white beans and mild poblano peppers that feels like a hug in a bowl. This lighter, flavorful dish is ready in under 30 minutes and perfect for cozy weeknight dinners.

Ingredients

Scale
  • 2 tablespoons extra virgin olive oil
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 1 lb 93% lean ground turkey
  • 1–2 poblano peppers, diced
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon chili powder
  • 1/4 teaspoon cinnamon
  • 1 (15-ounce) can plain tomato sauce
  • 1 cup low-sodium chicken broth
  • 2 (15-ounce) cans white beans (Cannellini or Great Northern), rinsed and drained
  • Salt and black pepper, to taste
  • Optional: Lime juice, sour cream, cilantro, avocado, cheese

Instructions

  1. Heat olive oil in a large pot over medium heat. Add diced onion and a pinch of salt; cook until soft and translucent (4-5 minutes).
  2. Add minced garlic and cook for 30 seconds until fragrant.
  3. Add ground turkey to the pot, breaking it up with a spoon. Cook until no longer pink (5-7 minutes). Drain excess fat if necessary.
  4. Stir in diced poblano peppers, cumin, smoked paprika, chili powder, and cinnamon. Cook for 1-2 minutes to bloom the spices.
  5. Pour in tomato sauce and chicken broth, stirring to scrape up browned bits from the bottom. Add rinsed white beans.
  6. Bring to a boil, then reduce heat to low. Simmer uncovered for 10-15 minutes until the chili thickens and flavors meld.
  7. Taste and season with salt and pepper. Add lime juice if desired. Serve hot with toppings.

Notes

For a thicker consistency, mash some beans against the side of the pot. This chili tastes even better the next day. Can be frozen for up to 3 months. For a vegetarian version, swap turkey for lentils or extra beans.
