A quick and easy 30-minute weeknight dinner featuring store-bought gnocchi tossed in a rich, savory sauce made with brown butter, fresh sage, and pumpkin puree.

  • 1/2 cup (1 stick) unsalted butter
  • 1/2 cup fresh sage leaves, roughly chopped or whole
  • 1/2 cup pure pumpkin puree (not pie filling)
  • 1/2 cup heavy cream
  • 2 cloves garlic, minced
  • 1/4 teaspoon nutmeg, freshly grated
  • 1/2 cup Parmesan cheese, freshly grated
  • 1/2 teaspoon red pepper flakes (optional)
  • Salt and black pepper to taste

Instructions

  1. Fill a saucepan with water, add a generous pinch of salt, and bring to a rolling boil.
  2. In a large skillet over medium heat, melt the butter. Swirl occasionally until it foams, settles, and smells nutty (about 3-5 minutes). Watch closely to avoid burning.
  3. Add the sage leaves to the brown butter and fry for 30-60 seconds until crisp and curled.
  4. Reduce heat to low. Stir in minced garlic and cook for 30 seconds until fragrant.
  5. Whisk in the pumpkin puree until smooth. If too thick, add a splash of reserved pasta water.
  6. Drop gnocchi into the boiling water. Cook for 2-4 minutes until they float to the top.
  7. Using a slotted spoon, transfer gnocchi directly into the skillet with the sauce. Do not rinse.
  8. Toss gnocchi to coat in the sauce. Stir in heavy cream.
  9. Remove from heat. Sprinkle in Parmesan cheese and red pepper flakes. Toss until cheese is melted.
  10. Season with salt and black pepper to taste. Serve immediately.

Notes

Save some starchy pasta water to thin the sauce if needed. Do not overcrowd the pan when boiling gnocchi. Serve immediately to prevent gnocchi from becoming mushy. For a dairy-free version, use dairy-free butter and coconut cream. For a gluten-free version, use gluten-free gnocchi.
