A simple, creamy slow cooker soup made with just a few wholesome ingredients. This recipe delivers restaurant-quality flavor and texture without the fuss, perfect for busy weeknights.

Ingredients

  • Broccoli florets (fresh or frozen)
  • Sharp cheddar cheese (block, grated)
  • Chicken or vegetable broth (low-sodium)
  • Heavy cream or half-and-half
  • Yellow onion (diced)
  • Garlic (minced)
  • Salt
  • Black pepper
  • Garlic powder (optional)
  • Mustard powder (optional)

Instructions

  1. Wash and cut broccoli into bite-sized pieces, including the stalks. Dice the onion and mince the garlic.
  2. Place broccoli, onion, and garlic into the slow cooker. Pour in the broth, ensuring vegetables are mostly submerged.
  3. Sprinkle in salt, pepper, and any dry seasonings. Stir gently to combine.
  4. Cover and cook on low for 4 to 6 hours until the broccoli is very tender.
  5. For a smooth texture, use an immersion blender to blend the soup. For chunkier soup, mash some broccoli with a potato masher.
  6. Turn the slow cooker to ‘warm’ or turn it off. Stir in the heavy cream.
  7. Add the grated cheddar cheese a handful at a time, stirring constantly until fully melted. Do not boil.
  8. Taste and adjust seasoning with more salt or pepper if needed. Serve hot.

Notes

Do not use pre-shredded cheese as it contains anti-caking agents that prevent smooth melting. Always grate your own cheese. Keep heat low when adding cheese to prevent separation. If soup is too thick, add more broth; if too thin, cook uncovered to reduce.
