  • 1.5 lbs boneless, skinless chicken breasts
  • 1 cup wild rice blend, uncooked
  • 1 can (10.5 oz) condensed cream of mushroom soup
  • 2 cups low-sodium chicken broth
  • 1 packet (about 1 oz) dry onion soup mix
  • Salt and pepper to taste
  • Optional: sliced mushrooms, fresh thyme sprigs, bay leaf, frozen peas

Instructions

  1. Rinse the wild rice blend in a fine-mesh strainer under cool running water for about 30 seconds. Shake off excess water and set aside.
  2. Pat the chicken breasts dry with paper towels. Trim off any visible fat or connective tissue. Season lightly with salt and pepper on both sides.
  3. Spray the inside of a 5-6 quart slow cooker with nonstick cooking spray. Spread the rinsed wild rice evenly across the bottom of the pot. Place the seasoned chicken breasts on top of the rice in a single layer. Do not stir.
  4. In a medium bowl, whisk together the cream of mushroom soup, chicken broth, and dry onion soup mix until smooth and no lumps remain.
  5. Pour the soup mixture evenly over the chicken and rice. Do not stir. The liquid should cover the chicken completely; if not, add a splash more broth. Optionally, tuck fresh thyme sprigs or a bay leaf into the liquid.
  6. Cover the slow cooker with the lid and cook on LOW for 4-6 hours. Do not lift the lid during the first 3 hours. The casserole is done when the chicken reaches 165°F internally and shreds easily with a fork, and the rice is tender but still has a slight chew.
  7. Once cooking is complete, carefully remove the chicken breasts to a cutting board. Use two forks to shred the meat into bite-sized pieces.
  8. Return the shredded chicken to the slow cooker. Stir everything together gently until the rice, chicken, and sauce are evenly distributed. If the mixture seems too thick, stir in an additional ¼ cup of warm broth. If too thin, let it cook uncovered for 10-15 minutes to thicken.
  9. Let the casserole sit in the slow cooker with the lid off for about 5 minutes before serving. Taste and adjust seasoning with salt and pepper if needed.

Notes

Do not lift the lid during the first 3 hours of cooking. Rice must be on the bottom to cook properly. For extra creaminess, add dairy only in the last 30 minutes. Let the casserole rest 5 minutes before serving to thicken the sauce.
