A comforting, creamy slow cooker taco soup that combines browned ground beef, beans, and corn with a signature ranch and cream cheese finish. It is an easy, dump-and-go meal perfect for chilly evenings.

  • 1 pound (450g) lean ground beef (90/10 or 93/7)
  • 1 medium yellow onion, finely diced
  • 3 cloves garlic, minced
  • 2 cups (480ml) low-sodium chicken broth
  • 1 envelope (1 ounce/28g) dry ranch seasoning packet
  • 2 tablespoons taco seasoning
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 can (15 oz/425g) black beans, rinsed and drained
  • 1 can (15 oz/425g) pinto beans, rinsed and drained
  • 1 can (15 oz/425g) corn, drained
  • 1 can (10 oz/280g) Rotel tomatoes (diced tomatoes with green chilies), undrained
  • 8 ounces (225g) full-fat cream cheese, cut into cubes
  • Shredded cheddar cheese, for garnish
  • Sour cream, for garnish
  • Fresh cilantro, chopped, for garnish
  • Avocado, sliced, for garnish

Instructions

  1. Heat a large skillet over medium-high heat. Add ground beef and break it apart with a wooden spoon. Cook until no pink remains (6-8 minutes). Drain excess grease, leaving a little for flavor.
  2. Add diced onion and minced garlic to the skillet in the last 2 minutes of cooking. Stir until the onion is translucent.
  3. Transfer the browned beef and onion mixture into a 6-quart slow cooker.
  4. Add chicken broth, taco seasoning, cumin, and chili powder. Stir well to combine.
  5. Add rinsed black beans, pinto beans, drained corn, and Rotel tomatoes with their juices. Stir everything together.
  6. Cover and cook on LOW for 4-6 hours (or HIGH for 2-3 hours).
  7. About 30 minutes before serving, turn the slow cooker to HIGH. Add cubed cream cheese and dry ranch seasoning packet.
  8. Stir gently but thoroughly until the cream cheese is melted and the soup is thickened and creamy.
  9. Taste and adjust seasoning with salt and pepper if needed.
  10. Ladle into bowls and top with shredded cheese, sour cream, fresh cilantro, and avocado. Serve immediately.

Notes

For best results, brown the beef in a skillet rather than adding it raw to the slow cooker to avoid a gray texture. Add cream cheese in the last 30 minutes to prevent breaking. If freezing, do so before adding the cream cheese as dairy may separate upon thawing. For a lighter version, substitute ground turkey or chicken and use Greek yogurt instead of cream cheese (add yogurt off-heat).
