A quick and easy 10-minute side salad featuring crisp apples, toasted pecans, and a tangy creamy dressing made with Greek yogurt and mayonnaise.

Ingredients

  • Firm apples (Honeycrisp or Gala), cored and cut into bite-sized chunks
  • Raw pecans
  • Full-fat Greek yogurt
  • Mayonnaise
  • Apple cider
  • Apple cider vinegar
  • Ground cinnamon
  • Salt
  • Freshly cracked black pepper
  • Optional: Dried cranberries or chopped celery

Instructions

  1. Toast raw pecans in a skillet over medium heat for 3-4 minutes until fragrant and golden. Remove from pan and let cool completely.
  2. Wash, core, and cut apples into uniform bite-sized chunks. Place in a large bowl.
  3. In a small bowl, whisk together Greek yogurt, mayonnaise, apple cider, apple cider vinegar, cinnamon, salt, and pepper until smooth.
  4. Pour the dressing over the apples and gently fold to coat evenly.
  5. Fold in the cooled pecans.
  6. Chill in the refrigerator for at least 10 minutes to allow flavors to meld before serving.

Notes

Toast pecans yourself for best flavor. Ensure pecans are completely cool before adding to prevent sogginess. Use firm apples like Honeycrisp or Gala to maintain crunch. Can be made dairy-free by substituting coconut yogurt and maple syrup.
