  • 1 cup full-fat mayonnaise

  • 1.5 cups sharp cheddar cheese, grated
  • 1/2 cup green onions, thinly sliced
  • 2 tbsp fresh chives
  • 1 tsp garlic powder
  • 1/2 tsp smoked paprika
  • Salt and black pepper to taste

Instructions

  1. Scrub potatoes clean and cut into 1-inch cubes. Place in a large pot.
  2. Cover potatoes with cold water by an inch, add a generous pinch of salt, and bring to a boil. Reduce to a simmer and cook for 10-12 minutes until tender but not mushy.
  3. Drain potatoes in a colander and let them sit for 5 minutes to steam off excess moisture.
  4. While potatoes boil, cook bacon in a cast iron skillet over medium heat until crispy (8-10 minutes). Remove bacon to a paper towel-lined plate and reserve 2 tablespoons of bacon fat.
  5. Crumble bacon into bite-sized pieces.
  6. In a large mixing bowl, whisk together mayonnaise, sour cream, Dijon mustard, yellow mustard, garlic powder, smoked paprika, salt, and pepper until smooth.
  7. Transfer warm potatoes to the bowl with the dressing. Gently fold to coat every piece, ensuring potatoes are still warm to absorb the dressing.
  8. Fold in crumbled bacon, shredded cheddar cheese, and sliced green onions.
  9. Cover and refrigerate for at least 1 hour to allow flavors to meld.
  10. Before serving, give a gentle stir and top with fresh chives and extra bacon bits if desired.

Notes

The key to this recipe is temperature. Potatoes must be warm when the dressing is added to allow them to absorb the flavors. Do not overcook the potatoes or they will become mushy. Grate your own cheese for better melting. The salad tastes better after chilling for at least an hour.
