  • 1/2 cup fresh sage leaves, chopped
  • 3 cloves garlic, minced
  • 2 cups butternut squash, peeled and cubed into 1/2-inch pieces
  • 1 medium carrot, diced small
  • 1/2 medium yellow onion, finely diced
  • 8 ounces (225g) penne or rigatoni
  • 1 cup heavy cream
  • 1/2 cup vegetable broth, low sodium
  • 1/2 cup Parmesan cheese, freshly grated
  • 1/4 teaspoon nutmeg, freshly grated
  • Salt and black pepper to taste

Instructions

  1. Prep the vegetables: Peel and cube the butternut squash, dice the carrots and onion, mince the garlic, and chop the sage.
  2. Sauté the aromatics: Heat butter in a large skillet or Dutch oven over medium heat. Add onions and carrots, sautéing for 3 minutes until soft. Add garlic and half the sage, cooking for 30 seconds.
  3. Add squash and pasta: Toss in the butternut squash and dry pasta. Stir to coat and toast for 2 minutes.
  4. Simmer: Pour in vegetable broth and heavy cream. Bring to a gentle boil, then reduce heat to medium-low. Simmer uncovered for 12-15 minutes, stirring every 2-3 minutes, until pasta is al dente and sauce thickens.
  5. Finish the sauce: Remove from heat. Stir in Parmesan cheese and remaining sage. Season with salt, pepper, and nutmeg.
  6. Serve immediately while hot and creamy.

Notes

Use freshly grated Parmesan to ensure smooth melting. Do not substitute heavy cream with milk as it may split. If using dried sage, use 1 teaspoon per 1/2 cup fresh. For dairy-free, swap butter for olive oil and cream for full-fat coconut milk. For gluten-free, use GF pasta and ensure broth/cheese are certified GF.
