These creamy overnight peanut butter protein oats are a quick, high-protein breakfast that tastes like a treat. With just five minutes of prep the night before, you wake up to a thick, pudding-like oatmeal that keeps you full until lunch.

Ingredients

Scale
  • 1/2 cup (40g) rolled oats (old-fashioned oats)
  • 1/2 cup (120ml) milk of choice (dairy, almond, oat, or soy)
  • 2 tablespoons (32g) natural peanut butter (creamy or crunchy)
  • 1 scoop (about 30g) vanilla or chocolate protein powder (whey or plant-based)
  • 1 tablespoon (15g) chia seeds (optional but recommended)
  • 1 to 2 teaspoons maple syrup or honey (optional, for sweetness)
  • 1 tiny pinch of salt
  • Toppings (optional): sliced banana, extra peanut butter drizzle, dark chocolate chips, chopped nuts, cinnamon

Instructions

  1. Combine the dry ingredients: In a mason jar or airtight container, add 1/2 cup rolled oats, 1 scoop protein powder, 1 tablespoon chia seeds (if using), and a tiny pinch of salt. Stir briefly to distribute the protein powder.
  2. Add the wet ingredients: Pour in 1/2 cup milk, making sure it covers the oats. Add 2 tablespoons peanut butter. If the peanut butter is stiff, warm it in the microwave for 10 seconds for easier mixing.
  3. Sweeten (optional): Add 1 to 2 teaspoons maple syrup or honey if desired.
  4. Stir everything together vigorously for about 30 seconds until the peanut butter is fully incorporated and no clumps remain. The mixture should look uniform and slightly thick.
  5. Seal the jar with a lid and refrigerate for at least 6 hours, but overnight (8 to 12 hours) is best.
  6. In the morning, stir the oats. If too thick, add a splash of milk. Top with desired toppings and enjoy cold or microwave for 45 to 60 seconds for warm oats.

Notes

For best texture, use rolled oats (not quick or steel-cut). Protein powder type affects thickness; whey gives creamiest results. Stir oats again after 30 minutes in the fridge for even texture. Oats keep up to 5 days in the fridge; flavors improve on day 2.
