A quick, 5-minute prep breakfast that requires no cooking. These overnight oats combine rolled oats, creamy peanut butter, and ripe banana for a thick, pudding-like texture that is perfect for meal prep and busy mornings.

Ingredients

Scale
  • 1/2 cup (40g) old-fashioned rolled oats
  • 1/2 cup (120ml) milk of choice (almond, dairy, or oat)
  • 2 tablespoons (32g) natural creamy peanut butter
  • 1 small ripe banana, sliced or mashed
  • 1 tablespoon (15ml) maple syrup
  • 1/2 teaspoon vanilla extract
  • 1 tablespoon (10g) chia seeds (optional)
  • A pinch of salt

Instructions

  1. In a jar or mixing bowl, combine the milk, peanut butter, maple syrup, vanilla extract, and salt. Stir vigorously until the peanut butter is fully dissolved.
  2. Add the rolled oats and chia seeds to the wet mixture. Stir well to ensure oats are fully submerged.
  3. Slice half of the banana and stir it into the oat mixture. Reserve the other half for topping.
  4. Seal the jar tightly and shake well to distribute ingredients. Refrigerate for at least 4 hours, preferably overnight.
  5. In the morning, stir the oats. Add a splash of milk if a looser consistency is desired. Top with remaining banana slices before serving.

Notes

Use old-fashioned rolled oats rather than quick oats to prevent a mushy texture. If using stiff natural peanut butter, microwave it for 10 seconds to soften before mixing. For extra protein, add a scoop of protein powder with the wet ingredients. Store in the fridge for up to 5 days. Do not freeze.
