A quick, 5-minute no-cook breakfast that combines old-fashioned oats with creamy peanut butter and ripe bananas for a rich, pudding-like texture that tastes like a treat.

  • 1/2 cup Milk (dairy or plant-based like almond or oat milk)
  • 2 tablespoons Creamy Peanut Butter
  • 1 medium Ripe Banana
  • 1 tablespoon Chia Seeds (optional)
  • 1/2 teaspoon Vanilla Extract
  • 1 pinch Salt

Instructions

  1. Mash the ripe banana directly into a mason jar or bowl until it is almost a puree.
  2. Add the milk, peanut butter, vanilla extract, salt, and chia seeds to the jar.
  3. Stir the mixture vigorously to break down the peanut butter completely until the liquid is smooth and uniform.
  4. Pour in the rolled oats and stir gently to coat every oat in the peanut-banana mixture.
  5. Top with sliced banana or extra chia seeds if desired.
  6. Seal the jar tightly and refrigerate for at least 4 hours, preferably overnight, until the oats are soft.

Notes

Use old-fashioned rolled oats, not instant or steel-cut. Ensure bananas are very ripe with brown spots for natural sweetness. Stir thoroughly to prevent peanut butter clumps. Can be stored in the fridge for up to 5 days. For a chocolate variation, add cocoa powder.
