  • ⅔ cup (160ml) milk (any kind)
  • ¼ cup (60g) plain Greek yogurt
  • 1 medium ripe banana
  • 2 tablespoons (32g) creamy peanut butter
  • 1 tablespoon (12g) chia seeds
  • 1 tablespoon (15ml) maple syrup or honey
  • ½ teaspoon vanilla extract
  • Pinch of fine sea salt

Instructions

  1. Mash the banana in a small bowl with a fork until mostly smooth with a few small lumps.
  2. Add the milk, Greek yogurt, peanut butter, maple syrup, and vanilla extract to the bowl. Whisk or stir vigorously until the peanut butter is fully incorporated, about 30 seconds.
  3. Stir in the rolled oats, chia seeds, and a pinch of salt until evenly combined. The mixture will be liquid—this is normal.
  4. Pour the mixture into a mason jar or airtight container, leaving about an inch of space at the top.
  5. Seal tightly and refrigerate for at least 6 hours, preferably overnight.
  6. In the morning, stir the oats well. Serve cold or microwave for 45-60 seconds if desired.
  7. Add toppings like sliced banana, extra peanut butter, granola, or chocolate chips. Sprinkle with flaky sea salt if desired.

Notes

Use a very ripe banana with brown spots for best sweetness and texture. Don’t skip the chia seeds—they create the thick, creamy texture. For meal prep, make the base without toppings and add fresh toppings each morning. The oats keep well for up to 5 days in the fridge. If the oats are too thick after a few days, stir in a splash of milk.
