  • 1 medium ripe banana
  • 2 tablespoons (32g) creamy peanut butter
  • ½ cup (120ml) milk of choice
  • ¼ cup (60g) Greek yogurt
  • 1 tablespoon (15ml) maple syrup or honey
  • 1 tablespoon (12g) chia seeds (optional)
  • Pinch of salt
  • ½ teaspoon vanilla extract (optional)

Instructions

  1. Mash the banana directly in your jar or container using a fork until mostly smooth with a few tiny lumps.
  2. Add the peanut butter to the mashed banana and stir until well combined.
  3. Pour in the milk and Greek yogurt, stirring until the peanut butter and banana are fully dissolved into the liquid.
  4. Add the maple syrup, vanilla extract, and salt. Stir to combine. Taste the liquid mixture—it should be slightly sweeter than you want the final oats to be.
  5. Stir in the rolled oats and chia seeds (if using) until all oats are fully submerged in the liquid. Press down any floating oats.
  6. Seal the jar tightly and give it a good shake if your container allows it.
  7. Refrigerate for at least 4 hours, but overnight (8-12 hours) is ideal.
  8. In the morning, take the jar out of the fridge and stir well. If too thick, add a splash of milk.
  9. Add toppings right before eating, such as sliced banana, extra peanut butter, cinnamon, chopped peanuts, or chocolate chips. Serve cold or microwave for 30-45 seconds if preferred.
