  • 8 ounces cream cheese, softened
  • 1 cup buffalo wing sauce (e.g., Frank’s RedHot Original)
  • 1 packet dry ranch seasoning mix
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup crumbled blue cheese (optional)
  • 1/4 cup milk
  • Tortilla chips, for serving
  • Celery sticks and carrot sticks, for serving
  • Sliced green onions, for garnish (optional)
  • Extra blue cheese crumbles, for garnish (optional)
  • Ranch or blue cheese dressing, for drizzling (optional)

Instructions

  1. Place the chicken breasts in the bottom of your slow cooker in a single layer. Pour the buffalo wing sauce over the top, coating each piece. Cover and cook on LOW for 3 to 4 hours, or on HIGH for 1.5 to 2 hours, until the chicken shreds easily and reaches 165°F internally.
  2. Transfer the cooked chicken to a cutting board and shred with two forks into bite-sized pieces. Return the shredded chicken and all juices to the slow cooker.
  3. Cut the softened cream cheese into cubes and add to the slow cooker. Sprinkle the ranch seasoning over everything, then add the milk. Stir well, cover, and cook on LOW for another 30 to 45 minutes, stirring once halfway, until the cream cheese is fully incorporated and the dip is smooth.
  4. Stir in the shredded cheddar cheese and crumbled blue cheese (if using). Mix until melted and gooey, about 5 minutes. The dip will thicken as it sits.
  5. Taste and adjust seasoning. Switch the slow cooker to WARM. Garnish with sliced green onions and extra blue cheese crumbles, if desired. Serve straight from the pot with chips, celery, and carrot sticks.

Notes

For best results, use full-fat cream cheese and shred cheddar from a block. Let cream cheese soften at room temperature for 30 minutes before adding. Keep the dip on LOW or WARM after adding cheese to prevent separation. This dip can be made ahead and refrigerated; reheat gently with a splash of milk.
