  • 1 medium yellow onion, diced
  • 4 cups russet potatoes, peeled and diced (about 4 medium potatoes)
  • 4 cups low-sodium beef broth
  • 8 oz sharp cheddar cheese, freshly shredded
  • 1 cup whole milk or heavy cream
  • 1/2 cup dill pickle relish (optional)
  • Salt and black pepper to taste
  • Optional toppings: shredded lettuce, diced tomatoes, chopped bacon, extra cheese

Instructions

  1. Brown the ground beef. Heat your large skillet over medium-high heat. Add the ground beef and cook, breaking it up with a wooden spoon, until it’s browned and no longer pink, about 5-7 minutes. Don’t drain all the fatโ€”leave a little for flavor. Add the diced onion in the last 2 minutes of cooking and stir until it starts to soften.
  2. Transfer to the slow cooker. Use a slotted spoon to transfer the beef and onion mixture to your 6-quart slow cooker.
  3. Add the potatoes and broth. Add the diced russet potatoes and pour in the beef broth. Give everything a good stir to combine.
  4. Slow cook. Cover the slow cooker and cook on LOW for 6-7 hours or on HIGH for 3-4 hours. The soup is ready when the potatoes are fork-tender and easily break apart.
  5. Add the dairy. About 30 minutes before you’re ready to serve, stir in the whole milk or heavy cream.
  6. Melt in the cheese. Turn the slow cooker to LOW if it isn’t already. Add the freshly shredded cheddar cheese a handful at a time, stirring gently after each addition until it’s fully melted.
  7. Season and stir in the relish. Taste the soup and add salt and black pepper as needed. Then stir in the dill pickle relish if you’re using it.
  8. Serve immediately. Ladle the soup into bowls and top with your favorite burger fixings. Serve hot and enjoy!

Notes

Don’t skip browning the beef for best flavor. Shred your own cheese from a block for a smooth, creamy sauce. Add dairy at the end to prevent curdling. Use low-sodium broth and season at the end to control salt. Check potatoes at the 6-hour mark on LOW to avoid overcooking.
