Creamy Slow Cooker Cheeseburger Potato Soup – Easy 7-Ingredient Dinner

A creamy, cheesy, beefy slow cooker soup that tastes like a cheeseburger but eats like a soup. Made with only 7 ingredients, it’s a set-it-and-forget-it dinner that’s perfect for busy weeknights.

  • 1 pound ground beef (80/20 works best)
  • 6 cups russet potatoes, peeled and diced into ยฝ-inch cubes (about 4 medium potatoes)
  • 1 medium yellow onion, diced (about 1 cup)
  • 4 cups low-sodium chicken broth (or beef broth for a deeper flavor)
  • 1 can (10.5 oz) condensed cheddar cheese soup
  • 2 cups sharp cheddar cheese, shredded (buy a block and shred it yourself)
  • 1 cup whole milk (or half-and-half for extra creaminess)
  • 1 teaspoon garlic powder
  • ยฝ teaspoon onion powder
  • ยฝ teaspoon black pepper
  • ยฝ teaspoon salt (plus more to taste)
  • Optional: 1 tablespoon Worcestershire sauce
  • For Toppings (Optional): additional shredded cheddar cheese, cooked and crumbled bacon, diced pickles or relish, chopped green onions, a dollop of ketchup and mustard

Instructions

  1. Heat a large skillet over medium-high heat. Add the ground beef and break it up with a wooden spoon. Cook for 6-8 minutes, stirring occasionally, until browned and no longer pink. Drain off excess fat, leaving about a tablespoon in the pan for flavor.
  2. While the beef is cooking, peel and dice the potatoes into ยฝ-inch cubes. Dice the onion into similar-sized pieces.
  3. Add the diced potatoes and onion to the bottom of a 6-quart slow cooker. Top with the browned ground beef.
  4. Pour in the chicken broth and condensed cheddar cheese soup. Add the garlic powder, onion powder, black pepper, salt, and Worcestershire sauce if using. Stir gently to combine.
  5. Cover and cook on LOW for 6-7 hours or on HIGH for 3-4 hours, until the potatoes are fork-tender.
  6. About 30 minutes before serving, stir in the milk and shredded cheddar cheese. Taste and adjust seasoning. Let cook for another 20-30 minutes on LOW until hot and bubbly.
  7. Ladle the soup into bowls and top with desired cheeseburger fixings. Serve hot.

Notes

For best results, shred your own cheese from a block to avoid anti-caking agents. If soup is too thick, stir in more milk or broth. If too thin, mash some potatoes against the side of the slow cooker to release starch. The soup tastes even better the next day.
