  • 2 medium delicata squash
  • 6 tablespoons unsalted butter
  • 2 tablespoons vegetable oil (avocado or grapeseed)
  • 1 teaspoon kosher salt
  • 1/2 teaspoon freshly cracked black pepper
  • Optional: pinch of red pepper flakes or dried sage

Instructions

  1. Preheat oven to 425ยฐF (220ยฐC).
  2. Wash the delicata squash, slice off top and bottom ends, cut in half lengthwise, scoop out seeds, and slice into half-inch thick half-moon shapes.
  3. Place squash slices on a prepared baking sheet. Drizzle with vegetable oil and sprinkle with kosher salt and black pepper. Toss to coat evenly and spread in a single layer.
  4. Roast for 20 minutes, or until edges start to brown. Roast for an additional 5-10 minutes if crispier texture is desired.
  5. While squash roasts, melt butter in a small saucepan over medium heat. Stir constantly until foam subsides and milk solids turn golden brown with a nutty aroma (3-5 minutes). Immediately remove from heat.
  6. Remove squash from oven and immediately drizzle hot brown butter over the hot squash. Toss gently to coat and serve warm.

Notes

Pat squash slices dry with paper towels before roasting to ensure crispiness. Do not overcrowd the pan to prevent steaming. Brown butter burns easily, so watch it closely and stir constantly. The skin of the delicata squash is edible and does not need to be peeled.
