  • 1 cup all-purpose flour
  • 1 cup cold water
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon smoked paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ cup hot sauce (such as Frank’s RedHot Original)
  • ¼ cup unsalted butter, melted
  • 1 tablespoon honey
  • ½ teaspoon Worcestershire sauce (optional)
  • Ranch or blue cheese dressing for serving (optional)
  • Celery sticks and carrot sticks for serving (optional)
  • Fresh chives or green onions, chopped for garnish (optional)

Instructions

  1. Preheat your oven to 450°F (230°C). Line a large baking sheet with parchment paper. If using a wire rack, place it on the lined sheet and spray lightly with cooking spray.
  2. Cut the cauliflower into bite-sized florets (about 1 to 1½ inches). Rinse and pat very dry with a clean kitchen towel.
  3. In a large mixing bowl, whisk together flour, garlic powder, onion powder, smoked paprika, salt, and black pepper. Add cold water and whisk until smooth. Let batter rest for 5 minutes.
  4. In a small saucepan over low heat, melt the butter. Add hot sauce, honey, and Worcestershire sauce. Whisk until smooth and keep warm on lowest setting.
  5. Drop a handful of florets into the batter. Use tongs to turn until fully coated. Let excess batter drip off, then place on prepared baking sheet, leaving about an inch of space between each floret.
  6. Bake for 20 minutes. Remove from oven and flip each floret carefully with tongs. Return to oven and bake for another 10 to 15 minutes, until deeply golden and crispy.
  7. Transfer hot cauliflower to a large bowl. Pour about two-thirds of the warm buffalo sauce over the top. Toss gently with tongs until evenly coated. Add more sauce if needed.
  8. Serve immediately on a platter. Drizzle with extra sauce, sprinkle with chopped chives or green onions, and serve with ranch or blue cheese dressing, celery, and carrot sticks.

Notes

Dry cauliflower thoroughly for best crispiness. Don’t overmix batter. Use a wire rack for maximum crispiness. Don’t drown in sauce; start with two-thirds and add more if needed. Keep warm in a 200°F oven for up to 30 minutes. For extra spicy version, add 1 teaspoon cayenne to batter and 1 tablespoon hot chili paste to sauce. For honey garlic version, reduce hot sauce to ⅓ cup and add 2 tablespoons honey and 1 tablespoon minced garlic. For gluten-free, use gluten-free all-purpose flour blend. For air fryer, cook at 400°F for 10-12 minutes, shaking halfway.
