A quick, no-bake Halloween dessert made with pantry staples. This recipe combines toasted rice cereal, melted marshmallows, and candy corn for a festive, chewy, and crispy treat that comes together in under 15 minutes.

Ingredients

Scale
  • 3 tablespoons unsalted butter
  • 10 oz (about 4 cups) standard white marshmallows
  • 6 cups crispy rice cereal (Rice Krispies)
  • 1 cup candy corn
  • Pinch of flaky sea salt (optional)

Instructions

  1. Line a 9×13 inch baking dish with parchment paper, leaving an overhang on the sides, and lightly grease with butter or cooking spray.
  2. Place a large saucepan (3-quart or larger) over medium-low heat and melt the butter slowly, swirling occasionally until liquid and bubbly (2-3 minutes). Do not let it brown.
  3. Add the marshmallows to the melted butter and stir constantly with a silicone spatula until completely melted and smooth (3-5 minutes). Remove the pan from heat immediately.
  4. Pour in the crispy rice cereal and gently fold it into the marshmallow mixture until every piece is coated. Avoid vigorous stirring to prevent breaking the cereal.
  5. Add the candy corn and fold it in gently for 1-2 minutes, being careful not to crush the candy.
  6. Transfer the mixture to the prepared baking dish. Use a buttered spatula or greased hands to press the mixture down evenly into a flat layer. Do not pack it tightly.
  7. Let the treats cool at room temperature for at least 30 minutes until firm.
  8. Cut into squares using a sharp knife or pizza cutter. Sprinkle with flaky sea salt if desired.

Notes

[‘Use high-quality marshmallows for a smoother melt.’, ‘Avoid chocolate-covered candy corn as it will make the mixture greasy.’, ‘Work quickly once the marshmallows are melted, as the mixture hardens fast.’, ‘Do not refrigerate, as this makes the marshmallows hard and unpleasantly chewy.’, ‘Store in an airtight container at room temperature for up to 5 days.’, ‘If the mixture is too sticky, wet your hands with cold water before pressing it into the pan.’]
