Crispy Cranberry Brie Bites: Easy Holiday Appetizer

Flaky, buttery puff pastry squares filled with creamy brie cheese and tart cranberry sauce, baked until golden brown for a perfect sweet and savory holiday appetizer.

  • 1 sheet thawed puff pastry (approx. 1416 oz)
  • 8 oz wheel of brie cheese, cut into small cubes
  • 1/2 cup cranberry sauce (whole berry or smooth)
  • 1 large egg, beaten with 1 tablespoon water or milk (for egg wash)
  • 2 tablespoons unsalted butter, melted
  • Coarse sea salt, for sprinkling

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Ensure puff pastry is thawed but still cold. Roll out slightly if it has shrunk back.
  3. Cut the pastry sheet into 2-inch squares (yields about 16-20 squares).
  4. Cut brie cheese into small cubes, roughly the size of a dice.
  5. Place one cube of brie in the center of each pastry square.
  6. Add a small teaspoon of cranberry sauce on top of the cheese. Avoid overfilling to prevent leaking.
  7. Fold the corners of the square up and over the filling to create a packet. Pinch edges firmly to seal.
  8. Whisk egg with water and brush lightly over the tops of the bites.
  9. Bake for 15-18 minutes, or until pastry is puffed and golden brown.
  10. Let cool for 2-3 minutes on the pan. Sprinkle with coarse sea salt and serve warm.

Notes

Keep the pastry cold for flakier results. If your kitchen is warm, chill assembled bites in the fridge for 10 minutes before baking. Do not use pre-sliced brie as it does not melt as well. Avoid runny cranberry sauce; cook it down slightly if necessary. Reheat leftovers in the oven at 350°F to restore crispiness.
