  • 23 hearts Romaine Lettuce
  • 1 head Radicchio
  • 2 cups Butternut Squash, peeled and diced into 1/2-inch cubes
  • 1 Apple (Honeycrisp or Fuji), cored and diced
  • 1/2 small Red Onion, thinly sliced
  • 1/2 cup Pecans
  • 1 tablespoon Olive Oil (for squash)
  • Salt and Pepper (for squash)
  • 1/4 cup Maple Syrup
  • 1/4 cup Apple Cider Vinegar
  • 1 tablespoon Dijon Mustard
  • 1/2 cup Extra Virgin Olive Oil (for dressing)
  • 1 clove Garlic, minced
  • Salt and Pepper (for dressing)
  • Optional: Feta or Goat Cheese, crumbled

Instructions

  1. Preheat oven to 400°F (200°C). Toss diced butternut squash with 1 tablespoon olive oil, salt, and pepper. Roast for 20-25 minutes until tender and caramelized. Let cool slightly.
  2. While squash roasts, chop radicchio and romaine hearts into 1-inch pieces. Dice the apple into similar-sized cubes. Slice the red onion thinly.
  3. Toast pecans in a dry skillet over medium heat for 3-5 minutes, shaking frequently, until golden. Remove from heat and let cool.
  4. In a jar or bowl, whisk together maple syrup, apple cider vinegar, Dijon mustard, minced garlic, salt, and pepper. Slowly drizzle in 1/2 cup olive oil while whisking to emulsify.
  5. In a large bowl, combine chopped greens, apples, red onion, cooled squash, and toasted pecans.
  6. Drizzle vinaigrette over the salad and toss gently to coat. Add cheese if using. Serve immediately.

Notes

Chop all ingredients to uniform sizes for even distribution of flavor and texture. Toast pecans carefully as they burn easily. Store dressing separately if meal prepping to maintain crunch. Do not freeze this salad.
