  • 1 bag (16 oz) mini pretzels
  • 2 tablespoons unsalted butter, melted
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ยฝ teaspoon smoked paprika
  • ยผ teaspoon cayenne pepper (optional)
  • Flaky sea salt, for finishing
  • 8 oz sharp cheddar cheese, sliced or cubed
  • 8 oz creamy brie, at room temperature
  • 4 oz goat cheese log, plain or herbed
  • 4 oz gouda, sliced
  • 6 oz prosciutto, thinly sliced
  • 6 oz genoa salami, thinly sliced
  • 4 oz honey ham, rolled or folded
  • 1 cup seedless red grapes, washed and dried
  • 1 large honeycrisp apple, thinly sliced and tossed with lemon juice
  • ยฝ cup whole almonds, toasted
  • ยผ cup honey
  • 2 tablespoons whole-grain mustard
  • Fresh rosemary sprigs for garnish (optional)

Instructions

  1. Preheat oven to 375ยฐF (190ยฐC). Line a large baking sheet with parchment paper. Spread mini pretzels in a single layer on the sheet.
  2. In a small bowl, whisk together melted butter, garlic powder, onion powder, smoked paprika, and cayenne (if using). Brush seasoned butter evenly over pretzels. Sprinkle with flaky sea salt.
  3. Bake pretzels for 8-10 minutes until golden and fragrant. Watch carefully after 7 minutes to avoid burning. Let cool on baking sheet for 5 minutes.
  4. While pretzels bake, toast almonds in a small dry skillet over medium heat for 3-4 minutes until fragrant. Pour onto a plate to cool.
  5. Take cheeses out of fridge 20 minutes before assembling to come to room temperature. Slice cheddar and gouda into thin triangles or cubes. Leave brie whole or cut into wedges. Place goat cheese log on a small plate.
  6. Fold prosciutto into loose ribbons. Roll salami slices into small cylinders or fold into quarters. Roll ham slices into tight logs and slice into pinwheels if desired.
  7. Wash and dry grapes. Slice apple thinly and toss with lemon juice to prevent browning. Pat dry with paper towel.
  8. Place large board or platter on counter. Fill small bowls with honey and whole-grain mustard; place at opposite ends of board.
  9. Arrange crispy pretzels in a generous pile in the center or along one side. Group cheeses in different spots around the board, placing brie near honey. Arrange meats in small clusters near cheeses.
  10. Scatter grapes, apple slices, and toasted almonds in gaps. Tuck rosemary sprigs for color. Drizzle honey over brie and goat cheese right before serving.
  11. Serve immediately with small plates, napkins, and cheese knives.

Notes

Don’t skip brushing pretzels with seasoned butter for best flavor. Watch pretzels closely after 7 minutes to prevent burning. Prep all components except pretzels the night before for easy assembly. Pretzels are best within an hour of baking. For gluten-free, use gluten-free pretzels. For lower-carb, replace pretzels with cucumber rounds and bell pepper strips.
