Instructions

  1. Preheat oven to 200ยฐF (95ยฐC). Line two baking sheets with parchment paper.
  2. In a clean, dry glass or metal bowl, beat egg whites on medium speed until foamy and bubbly (1-2 minutes).
  3. Add cream of tartar and increase speed to high. Beat until soft peaks form (1-2 minutes).
  4. With mixer on high, slowly add sugar one tablespoon at a time, waiting 10 seconds between additions (3-5 minutes total).
  5. Continue beating on high for 1-2 minutes until stiff, glossy peaks form. Add vanilla and salt, beat 30 seconds to combine.
  6. Transfer meringue to a piping bag fitted with a large round tip.
  7. Pipe teardrop shapes onto baking sheets, creating a point at the top and a small tail at the bottom. Space 2 inches apart.
  8. Bake for 1 hour 15 minutes to 1 hour 30 minutes until dry to the touch and pale white.
  9. Turn off oven and prop door open with a wooden spoon. Let cookies cool in oven for at least 1 hour until completely crisp.

Notes

Ensure all equipment is completely clean and dry, as any grease or moisture can prevent egg whites from whipping properly. Do not use brown sugar as it adds moisture and results in a chewy texture.
