These crispy ghost meringue cookies are a simple, spooky, and delicious Halloween treat. Made with just egg whites, sugar, and cream of tartar, they are naturally gluten-free, light, and shatteringly crisp.

  • 1 cup (200 grams) granulated sugar
  • 1/2 teaspoon cream of tartar
  • 1 teaspoon vanilla extract
  • 1/8 teaspoon salt
  • Black gel food coloring or edible markers (for decorating)

Instructions

  1. Preheat oven to 200°F (95°C). Line two baking sheets with parchment paper.
  2. Separate egg whites into a clean, grease-free mixing bowl. Ensure no yolk is present.
  3. Add cream of tartar and salt to the egg whites. Whip on medium-low speed until foamy (1-2 minutes).
  4. With the mixer running, slowly add granulated sugar, one tablespoon at a time, until fully incorporated (4-5 minutes).
  5. Increase speed to medium-high and whip until stiff, glossy peaks form. Add vanilla extract during the last minute of mixing.
  6. Transfer meringue to a piping bag fitted with a round tip. Pipe ghost shapes onto prepared baking sheets, leaving 1-2 inches between each.
  7. Bake for 1.5 to 2 hours until dry to the touch and matte white.
  8. Turn off the oven and crack the door open. Let meringues cool completely inside the oven (about 30 minutes).
  9. Once cool, use black gel food coloring or edible markers to draw faces on the ghosts.

Notes

Ensure all equipment is completely grease-free. Use room temperature egg whites for better volume. Do not open the oven door frequently during baking. Store in an airtight container away from humidity. For vegan version, substitute egg whites with aquafaba (3 tbsp per egg white).
