  • ⅓ cup all-purpose flour
  • 2 tablespoons cornstarch

  • ½ teaspoon smoked paprika

  • 2 tablespoons olive oil
  • 3 tablespoons maple syrup
  • 1 tablespoon butter, melted
  • ¼ teaspoon cinnamon (optional)

Instructions

  1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. Wash the delicata squash well. Cut off both ends, then slice the squash into ½-inch thick rings. Use a small spoon or your fingers to scoop out the seeds and stringy bits from the center of each ring.
  3. In a small bowl, whisk together the all-purpose flour, cornstarch, garlic powder, smoked paprika, salt, and black pepper.
  4. Place the squash rings in the bowl with the dry coating and toss gently with your hands until each ring is evenly coated on both sides. Shake off any excess flour mixture.
  5. Arrange the coated rings in a single layer on the prepared baking sheet, making sure they are not touching. Drizzle or brush the olive oil evenly over the tops of the rings.
  6. Bake for 10 minutes. The rings should be starting to turn golden on the bottom edges.
  7. Carefully flip each ring over using a spatula.
  8. Bake for another 8-10 minutes until the rings are deeply golden and crispy on both sides.
  9. While the rings bake, make the glaze: In a small bowl, whisk together the maple syrup, melted butter, and cinnamon (if using).
  10. Remove the baking sheet from the oven. Using a pastry brush, brush the maple glaze over each ring while they are still hot.
  11. Serve immediately.

Don’t overcrowd the pan; rings should not touch. Glaze only after baking to prevent burning. For best texture, serve immediately. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days and reheated in a 400°F oven for 5-7 minutes or in an air fryer at 375°F for 3-4 minutes.
