  • 1 medium delicata squash (11.5 lbs), washed and sliced into ½-inch rings
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons pure maple syrup
  • ½ teaspoon coarse sea salt
  • ¼ teaspoon freshly cracked black pepper
  • ¼ teaspoon red pepper flakes (optional)
  • 1 tablespoon chopped fresh thyme or sage (optional)
  • ¼ cup chopped pecans or walnuts (optional, for garnish)

Instructions

  1. Preheat oven to 400°F (200°C). Line a large half-sheet baking pan with parchment paper.
  2. Wash the delicata squash thoroughly and slice it into ½-inch thick rings. Leave the skin and seeds on.
  3. In a small bowl, whisk together the olive oil, maple syrup, salt, pepper, and red pepper flakes until smooth.
  4. Place the squash rings on the prepared baking sheet. Drizzle the glaze over the squash and toss to coat evenly.
  5. Roast for 15 minutes, then remove the pan and flip each ring over.
  6. Return to the oven and roast for another 10-15 minutes, or until tender and edges are browned and caramelized.
  7. Remove from oven and garnish with fresh herbs and chopped nuts if desired. Serve immediately.

Notes

Do not crowd the pan to ensure crispiness; use two pans if necessary. Watch the maple syrup closely in the last few minutes as it can burn. If the squash is hard to cut, microwave it for 1-2 minutes to soften. For air fryer method, cook at 380°F for 10-12 minutes, shaking halfway through.
