  • 2 tablespoons pure maple syrup

  • ยผ teaspoon freshly ground black pepper
  • Optional: pinch of cayenne pepper or red pepper flakes
  • Extra fresh sage leaves (about 6 to 8) for garnish

Instructions

  1. Preheat oven to 425ยฐF (220ยฐC). Peel the butternut squash, cut off the ends, slice in half where the neck meets the bulb, cut each piece in half lengthwise, scoop out seeds, and cut into ยพ-inch cubes.
  2. In a large mixing bowl, combine cubed squash, olive oil, cornstarch, salt, and pepper. Toss until evenly coated. Add maple syrup and chopped sage, toss gently.
  3. Line a large rimmed baking sheet with parchment paper. Spread squash in a single layer, ensuring pieces are not touching or overlapping.
  4. Roast for 15 minutes. Remove from oven, flip each piece with a spatula. Return to oven and roast for another 10 to 15 minutes, until edges are deep golden brown and crispy, and centers are tender.
  5. While squash roasts, heat a small skillet over medium heat with a drizzle of olive oil. Add extra sage leaves and cook 30 to 60 seconds per side until dark green and crisp. Transfer to paper towel and sprinkle with salt.
  6. Transfer roasted squash to a serving platter. Sprinkle with crispy sage leaves and flaky sea salt. Serve hot.

Do not skip the cornstarchโ€”it creates the crispy crust. Cut squash into uniform ยพ-inch cubes for even cooking. Avoid overcrowding the pan to prevent steaming. For best texture, serve immediately. Leftovers can be reheated in a 400ยฐF oven or air fryer.
