  • 34 cloves garlic, minced
  • 1/2 cup aged parmesan cheese, grated
  • Balsamic vinegar or glaze
  • Kosher salt
  • Freshly cracked black pepper
  • Red pepper flakes (optional)

Instructions

  1. Preheat oven to 400ยฐF (200ยฐC). Wash and thoroughly dry Brussels sprouts. Trim woody stems and halve if large.
  2. Toss sprouts in a bowl with olive oil, salt, and pepper until evenly coated.
  3. Spread sprouts in a single layer on a large rimmed baking sheet. Do not overcrowd.
  4. Roast for 20 minutes, flipping halfway through, until edges are crispy and browned.
  5. Remove from oven. Sprinkle minced garlic and grated parmesan over the hot sprouts. Toss gently.
  6. Return to oven for 5 minutes until garlic is fragrant and cheese begins to melt.
  7. Remove from oven and drizzle with balsamic vinegar. Toss to coat.
  8. Return to oven for 1-2 minutes to set the glaze.
  9. Serve immediately while hot and crispy.

Notes

Ensure sprouts are completely dry before roasting to maximize crispiness. Do not overcrowd the pan; use two sheets if necessary to prevent steaming. Add garlic in the last few minutes to prevent burning. Best served immediately as texture degrades upon cooling.
