A simple yet impressive side dish featuring acorn squash roasted at high heat for crispy edges, topped with tart dried cranberries and toasted walnuts for a perfect balance of sweet, savory, and crunchy textures.

  • 2 medium acorn squash
  • 3 tablespoons extra virgin olive oil
  • 1 teaspoon sea salt (plus more for finishing)
  • 1/2 teaspoon black pepper
  • 1/2 cup dried cranberries
  • 1/2 cup walnuts, chopped
  • 1 tablespoon maple syrup or honey (optional)
  • 1 teaspoon fresh thyme or rosemary (optional)

Instructions

  1. Preheat oven to 400ยฐF (200ยฐC).
  2. Wash the acorn squash thoroughly. If too hard to cut, microwave for 2 minutes to soften slightly.
  3. Slice the squash in half lengthwise and scoop out the seeds and pulp.
  4. Place squash halves cut-side down on a large rimmed baking sheet lined with parchment paper.
  5. Drizzle 1 tablespoon of olive oil over each half and sprinkle with salt and pepper.
  6. Roast for 25 minutes until the flesh is softened.
  7. Remove from oven and flip squash halves cut-side up.
  8. Increase oven temperature to 425ยฐF (220ยฐC) if possible.
  9. Drizzle remaining olive oil over the cut sides.
  10. Sprinkle dried cranberries and chopped walnuts evenly over the squash.
  11. Return to oven and roast for another 15-20 minutes, watching closely in the last 5 minutes to prevent burning.
  12. Squash is done when tender when pierced with a fork and walnuts are golden.
  13. Let rest for 5 minutes before serving.

Notes

Ensure the squash is dry before oiling to promote crispiness. Do not overcrowd the pan to avoid steaming. Walnuts burn easily, so monitor them closely during the final roasting phase. For extra crispiness, broil for the last 1-2 minutes.
