A festive, no-bake Halloween snack where a watermelon wedge is carved into a pumpkin shape and filled with fresh fruits like grapes, bananas, and blueberries. It is a quick, healthy, and visually appealing treat perfect for kids and parties.

Ingredients

  • 1 medium watermelon wedge (with rind)
  • Red or black seedless grapes
  • 1 ripe banana, sliced into small rounds
  • 1/2 cup blueberries
  • 1 orange segment (mandarin or navel)
  • Optional: Coconut flakes
  • Optional: Lime juice

Instructions

  1. Pat the watermelon wedge dry and place it on a cutting board with the rind side down for stability.
  2. Carve a small triangle at the top of the wedge to create a stem, and trim the edges slightly to round the shape.
  3. Using a spoon, scoop out the red flesh from the center, leaving about half an inch attached to the rind to maintain the pumpkin color gradient. Save the scooped flesh.
  4. Carve two triangle eyes, a nose, and a mouth into the rind using the tip of a paring knife, being careful not to cut all the way through.
  5. Prepare the filling by slicing bananas, washing grapes and blueberries, and separating orange segments. Chop the reserved watermelon flesh into cubes and mix with other fruits.
  6. Spoon the fruit mixture into the hollowed-out watermelon pumpkin, mounding it slightly.
  7. Tuck grapes into the sides to resemble seeds and place blueberries on top for contrast.
  8. Serve immediately chilled.

Notes

Chill the watermelon before carving for easier cutting. Carve the pumpkin right before serving to prevent the rind from drying out or the fruit from oxidizing. For young children, cut grapes in half to prevent choking. The recipe is naturally gluten-free and vegan.
