A quick and spooky Halloween appetizer featuring hard-boiled eggs filled with a creamy yolk mixture and decorated with black olive slices attached via toothpicks to resemble spider legs.

Ingredients

  • Large eggs (hard-boiled and peeled)
  • Full-fat mayonnaise (e.g., Dukeโ€™s or Hellmannโ€™s)
  • Yellow mustard or Dijon mustard
  • Smoked paprika or regular paprika
  • Sliced black olives (pitted)
  • Wooden toothpicks
  • Salt and pepper to taste
  • Pickle relish (optional)

Instructions

  1. Place eggs in a saucepan and cover with cold water. Bring to a boil over medium-high heat, then cover and remove from heat. Let sit for 12 minutes.
  2. Transfer eggs to an ice water bath and let cool for at least 10 minutes. Peel the eggs under running water if needed.
  3. Cut each egg in half lengthwise. Use a small spoon to scoop out the yolks into a mixing bowl, leaving the whites intact.
  4. Mash the yolks with a fork until smooth. Add mayonnaise, mustard, paprika, salt, and pepper. Mix until creamy. Add pickle relish if using.
  5. Spoon or pipe the yolk mixture back into the egg whites.
  6. Slice black olives into thin strips, about two inches long. Aim for four strips per egg half.
  7. Insert a toothpick into the side of the filling. Slide an olive strip onto the toothpick to create legs. Repeat for all four legs per half.
  8. Arrange the spiders on a platter and garnish with extra paprika if desired. Serve immediately or refrigerate.

Notes

For easier peeling, use older eggs or add baking soda to the boiling water. Pat olive slices dry before attaching to prevent toothpicks from slipping. For ultra-smooth filling, pass the yolk mixture through a sieve. Assemble spiders just before serving to keep olives crisp.
