These Easy Crockpot Meatball Subs are the perfect game day recipe with just three ingredients and minimal prep. Let the slow cooker do the work while you enjoy the party.

Ingredients

Scale
  • 2 lbs frozen meatballs (homestyle or Italian-style, fully cooked)
  • 24 oz jar marinara sauce (such as Rao’s Homemade or Victoria)
  • 68 hoagie or sub rolls (sturdy, 68 inches long)
  • 8 slices provolone or mozzarella cheese (optional but recommended)
  • Optional toppings: sautéed peppers and onions, banana peppers, red pepper flakes

Instructions

  1. Place frozen meatballs directly into a 5-6 quart slow cooker in a single layer as much as possible.
  2. Pour the jar of marinara sauce evenly over the meatballs and gently stir to coat.
  3. Cover and cook on LOW for 4-5 hours or on HIGH for 2-3 hours. Stir once halfway through cooking.
  4. About 15 minutes before serving, preheat the oven broiler. Slice hoagie rolls open (leave a hinge) and place cut-side up on a baking sheet. Toast under broiler for 1-2 minutes until lightly golden.
  5. Using a slotted spoon, place 3-4 meatballs on the bottom half of each toasted roll. Top with a slice of cheese.
  6. Optional: Return assembled subs to the broiler for 30-60 seconds to melt the cheese.
  7. Serve immediately with optional toppings on the side.

Notes

For best texture, cook on LOW. Don’t open the lid frequently. Toast rolls to prevent sogginess. Use a slotted spoon to serve. Leftover meatballs can be stored in the refrigerator for up to 4 days or frozen for up to 3 months.
