A quick, no-cook breakfast that combines creamy peanut butter, sweet mashed banana, and rolled oats for a rich, comforting meal that requires only five minutes of prep time.

  • 1/2 cup (40g) Old-Fashioned Rolled Oats
  • 1 medium ripe banana, mashed
  • 2 tablespoons (32g) creamy peanut butter
  • 3/4 cup (180ml) milk (dairy, almond, oat, or soy)
  • 1 tablespoon (10g) chia seeds (optional)
  • 1/2 teaspoon vanilla extract
  • a pinch of salt

Instructions

  1. Peel the banana and place it in a mason jar. Mash it thoroughly with a fork until it is almost a smooth puree with no large chunks.
  2. Add the rolled oats and chia seeds to the jar with the mashed banana. Add the vanilla extract and sprinkle the salt over the top.
  3. Pour the milk over the dry ingredients, ensuring all oats are covered evenly.
  4. Scoop the peanut butter into the jar.
  5. Mix everything thoroughly with a spoon or whisk for 30 seconds to 1 minute until the mixture is uniform and slightly thick.
  6. Add optional banana slices for topping, seal the jar tightly, and shake gently to settle the contents.
  7. Refrigerate for at least 4 hours, preferably overnight (8-12 hours). Stir before eating and add a splash of milk if too thick.

Notes

Use ripe bananas for natural sweetness and better texture. Do not use instant or steel-cut oats. Ensure jars are clean and dry to prevent spoilage. Store in the refrigerator for up to 5 days. Can be microwaved for 60-90 seconds if a warm breakfast is preferred.
